Chicken Meatballs
Meatballs add more enjoyment to
children’s party and family gatherings. The meatballs are combined with panko
bread crumbs, cloves garlic, cayenne pepper, and chives. The sauce is extra hot
with the blend of hot sauce, red pepper flakes and apple cider vinegar.
Servings: 4-6
Ingredients
For the meatballs:
1 pound ground chicken
1/2 cup panko bread crumbs
1/4 cup chopped chives (divided)
2 minced cloves garlic
1 egg
Kosher salt
Pinch cayenne
pepper
1 tablespoon vegetable oil, for frying
For the sauce:
2 tablespoons apple cider vinegar
1/2 cup hot sauce
1/4 cup lightly packed brown sugar
Red pepper flakes
Kosher salt
Directions
Form meatballs:
Combine in a large bowl the ground
chicken, 2 tablespoons chives, panko bread crumbs, egg, salt, pepper and
garlic.
Form the mixture into small balls as
big as golf balls.
Make sauce:
Whisk in a medium bowl the apple
cider vinegar and brown sugar; season with red pepper flakes and salt.
Meanwhile, heat the vegetable oil
over moderate heat in a large skillet.
Place the meatballs in the skillet in
single batches; cook for three to four minutes each side until seared
throughout.
Pour the sauce and simmer over low
heat until the sauce has slightly thickened. Continue cooking for ten minutes.
Serve warm.
